The Ultimate Immune-Boosting, Asian-inspired Thai Pumpkin Soup
Sometimes you just looking for some superfoods to kick your immune system into top gear. This is especially true during the those winter nights when you desperately need some natural remedies against the cold!

Ingredients
- 500g chopped pumpkin
- 1 medium chopped sweet potato
- 1 spoon canola oil
- 1 large diced onion
- 2.5 litres vegetable stock
- 2 cloves of chopped garlic
- 1 inch chopped piece of ginger
- Sea salt & pepper
- Pinch of nutmeg
- 2 tablespoon Thai red curry paste
- 50g or 1/2 cup each of shredded carrot, zucchini, parsnip & celery
- 50g or 1/2 cup bean sprouts
- 1 stalk of bruised lemongrass
- 1/4 bunch of chopped coriander
Method
In a large pot, heat the oil on moderate flame and add the onion and sautรฉ for 5 minutes. Now saute Pumpkin, sweet potato, garlic, ginger and lemongrass with a little vegetable stock. Add curry paste and then season with pinch of salt & rest of spices. Reduce the heat to low and simmer for 20-30 minutes.
Once done, Puree soup in a blender and check seasoning. Add the shredded vegetables just before serving and sprinkle with chopped coriander.
Top Tip
Make ahead! Like most soups, this one is even better made the day before. Reheat before serving.
